About
Hi, I'm Al Kanbar.
25+ years in restaurant operations, from the line to the brand level. I started Silver Spoon Mia in 2018 because independent operators deserve the same systems the big brands run on.

From a 350-seat, 24-hour restaurant to Starbucks, Yum and RBI.
I opened my first restaurant, 350 seats and open 24 hours, before most consultants ever ran a shift. Then came years running operations for Starbucks, Yum Brands, Restaurant Brands International and Johnny Rockets. Multi-unit. Multi-brand. Real P&Ls.
Here's what that taught me. Restaurants don't fail because the food is bad. They fail because the systems behind the food are broken and nobody can see where the money is leaking. The fix isn't a bigger idea. It's operating discipline: knowing your numbers every week, and building the habits that keep them where they belong.
That's what we do at Silver Spoon Mia. We diagnose, design, implement and coach, and we stay on the floor until the new way is the only way.
